SUPER DUPER Compilation Post

I so appreciate all that I have learned to cook from my grandmother and parents. Most of the things I cook today I learned from watching them. I thought I would list some of my favorites and then I could share recipes later if there is any interest.

Grandmama
Breakfast --she cooked a complete breakfast of eggs, sausage, bacon, biscuits, and gravy with an assortment of jellies every single morning!

Green Beans out of the garden with lots of bacon and onions

Okra Gumbo

Cheese toast--white bread with thick slices of cheddar and black pepper on top

Tomato sandwiches
Peach cobbler

Mom and Dad
Both parents really know how to cook!

Chicken Fried Steak
Gravy

Chicken Enchiladas

Chili (I kinda know how)

Roast

Meatloaf (probably my favorite thing mom makes--secret ingredient: bacon)

Mac n' cheese

Three layer cake (use of waxed paper)

Vegetable Soup

Salmon Croquettes--that's just what we call 'em, people

Chocolate Chip Cookies--yes, I have the near world famous recipe but NO ONE can do them like her!

I read somewhere this week that someone had asked a Christian scholar what he was reading and he replied, "Well, I decided that there is a lot of stuff in the Bible I don't know yet so I am just reading that for now."

Words of wisdom? They hit me as such. I was just bragging to someone about how I had a couple of different books sitting in each room and was reading all of them at the same time. Idiot.

I have not been reading responsibly. If I have a question of spiritual nature, I immediately run to my mom's bookshelf or doing a google search by entering (the topic related to the question) + (author du jour) and applying whatever I find as if it were scripture. What is that about? Anything any of those authors have come to write about can not possibly trump The Book. Why can't I just go to it? I should be standing on it, clinging to it, cherishing its every living, piercing word.

But, I'm not giving up reading outside of the Bible immediately. I am right in the middle of Mere Christianity and it's way too fascinating to stop!

Things I will be doing on Thursday:
Going to the
AMERICAN IDOL CONCERT!
Nothing else matters.

Dear Kris,
I have been a devoted fan. Even though I said Adam would win in my first ever Idol Thoughts post (yes, I did say that and I am sorry) I still had faith in you. I knew that you could make all us people with decent taste in music proud.
Now guess what my sparkling, dark horse? I am coming to see you. This Thursday. I will be the one screaming hysterically and crying like the girls did when they saw Elvis. I will claw at my face and eyes while the tears stream down my face. Not really, but I am super excited that I get to see you live. Please be as good as I think you are.
Please tell Michael to bring on the cheese. I have come to terms with it and I am ready to see him, too. How is Adam doing? Does he still scream really loud and spit and hold his tongue out awkwardly and needlessly? I hope not. Help him.
Well, that's all I really wanted to say. Can't wait to see you on Thursday!
Your #1 Fan,
Red Writing

If you wouldn't mind, say a quick prayer for my husband. I know I have been talking about his firefighter status for a long time but tomorrow is his first day on actual shift as a firefighter. Here are some pictures from his orientation graduation ceremony last week.

She will be 10 months this week!

Shaking hands with the Chief.

This is the part where he vowed to lay down his life for others.

Life as we know it has changed...but for the better!

  2. Oh what a cute little family you are!! That ceremony reminded me of the one my brother had when he became a cop. It scared me a little.

Oh, and have fun at the concert!

Also.. now I'm really hungry. For all of the above.

  4. Keelie, I am "showing interest". I actually would like to have ALL of yours and your mom's recipes.
For now, can I have the meatloaf recipe?

Have fun at the American Idol concert! I wish I was going.
I am continuing to pray for Justin.

  5. Great blog. As M said, you got it all in!

You definitely learned from wonderful cooks! Sometimes all the recipe books in the world can't hold a candle to time in the kitchen with family members.

    Love!

  6. Um, I remember years ago (the number of years shall remain unsaid) that we ate chicken nuggets that your mom made. I MUST have this recipe, should you opt to keep it a secret, I completely understand. I, of all people, understand how a recipe becomes a family secret! They were THAT good though, I still remember LOL! As for every other post...my prayers have always been and will continue to be with your family, I've always considered you to be a true friend and it's the very least I can do. Awesome pics AND...UGH, the AI concert?!?!? I'm jealous.

  7. Oh and I must say...I don't care to have the recipe for your mom's Chocolate Chip Cookies. I don't care how amazing the ingredients are or how much love I put into them...they will never be the same. The sad thing is, it's ANOTHER food I completely remember, just awesome.

  8. Chicken Nuggets

1 pkg chicken breasts or tenderloins cut in 1.5" squares
    2 eggs
    milk
    flour
    salt
    pepper
    vegetable oil

Cut the chicken into 1.5" chunks. Whisk eggs in a cereal bowl and add enough milk to fill bowl. Get 2 Wal-Mart sacks and put one inside the other. Put about 3 cups of flour down into the sack. Then add a couple tablespoons or more salt and pepper to the flour and mix together. Dip the chicken a couple at a time into the egg mixture and then place into the bag with flour. When they are all in there, twist the top and shake until all the chicken is coated with flour. (If you want to make them really good start with flour, then dip in egg, and then go back to flour, up to you). Take out the coated chicken and let it rest on a paper towel or something while you heat up the oil. Get a BIG frying pan and fill it up with oil. You want the oil to be about 3/4 the way up the side of the nuggets. (What? am I making sense?) PUt it on medium/high. Wait until the oil gets pretty hot. Drop a little flour in the oil and if it sizzles around then it is ready. Put the nuggets in but they can not touch! you may have to do two batches. Let them fry on one side until they are good and brown on the sides then flip. DO NOT move them until they are brown on the edges--the crust stuff will come off!!You will be tempted--resist it. Then when you really think they are ready (I usually take one out and cut into it) take them out and enjoy. Let me know how it goes.

  9. I have copied and pasted this, so it's officially become part of my recipe box. However, I've called it "GranMary's Nuggets" so that credit is given where it's due. Thanks again! Will let you know how it goes!

  10. Awesome! I am a new reader to your blog {can't actually remember how I got here to be honest...did you post something on diy day at ASPTL?} Anyhow, I love your blog, and I had to comment on this post because I too am married to a firefighter! Hope the job turns out to be the best thing ever for your family! Plus, I am working on a wreath next weekend with my mom, and I so wish I had known about your wreath party before now. And I can't wait to see how your bag turns out. I haven't decided if I like that bag or not, so hopefully you convince me to love it with your cool creation!
