Easy Cheesy Lasagna


I created this simple recipe a couple of years ago when I was frustrated because there was not enough "stuff" --as in the cheese mixture and the meat mixture--when I was making lasagna. This recipe requires NO measuring and it is very good, in my humble opinion.


These are the only ingredients you will need:

Oven Ready Lasagna Noodles
2 regular jars spaghetti sauce (I prefer Prego meat and mushroom)
1 lb hamburger meat
I had a package of pepperoni so I used that. Its optional.
2 eggs
1 medium carton cottage cheese (not a fan of ricotta)
1 2 lb package mozzarella cheese
1 regular package Parmesan (do not use green can)


Brown meat.


Chop up pepperoni to 1/4 its original size.


Add pepperoni to browned meat and add sauce.


See how easy? Even a child can do it =)


For the cheese mixture just dump everything into a bowl and stir until egg is evenly distributed. Reserve enough mozzarella to generously cover top of lasagna.


Use OVEN READY Lasagna noodles. They work great!


How to layer:
1. very thin layer of meat sauce, just to keep from sticking
2. 3 noodles
3. 1/2 cheese mixture spread out evenly
4. 1/3 meat mixture spread out evenly
5. Repeat 2-4
6. 3 noodles
7. Last 1/3 of meat mixture
8. Top with reserved mozzarella
9. Bake at 350 for 55 minutes...ovens may cook differently so check often. I like it brown on top. Like this:


Notes:

Use the biggest pan you have! Put foil underneath in the oven because it is likely to bubble over. We like this!

Tastes better if you make the day before and put in refrigerator overnight. Cook just before serving.

Let it "set up" for about 20 minutes before serving. You MUST do this. Allow enough time.
